These Sourdough Discard Breakfast Pockets are delicious, golden-brown pastries filled with fluffy scrambled eggs, melted cheddar cheese, savory breakfast sausage, and fresh vegetables. Made with leftover sourdough starter, they’re easy to prepare, freezer-friendly, and perfect for busy mornings, family breakfasts, or weekend brunch.

Ingredients

Scale

For the Sourdough Dough

1 cup (240 g) sourdough discard, at 100% hydration

1½ cups (180 g) all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

4 tablespoons (57 g) cold unsalted butter

1–2 tablespoons cold water, if needed

For the Breakfast Filling

4 large eggs

½ cup shredded cheddar cheese

½ cup cooked breakfast sausage

¼ cup diced bell peppers

2 tablespoons chopped green onions

1 teaspoon butter

Salt and black pepper to taste

For the Egg Wash

1 large egg

1 tablespoon water

Instructions

Prepare the Sourdough Dough

In a large mixing bowl, combine the all-purpose flour, baking powder, and salt.

Add the cold butter and work it into the flour until the mixture resembles coarse crumbs.

Stir in the sourdough discard until a soft dough forms. Add cold water gradually if needed.

Gently knead until combined. Cover and refrigerate for 15–20 minutes.

Prepare the Breakfast Filling

Heat one teaspoon of butter in a nonstick skillet over medium heat.

Add the diced bell peppers and cook until softened.

Whisk the four eggs in a separate bowl and pour them into the skillet.

Stir gently until the eggs are just set.

Remove from the heat and combine with the cooked breakfast sausage.

Season with salt and black pepper. Allow the filling to cool slightly.

Assemble the Breakfast Pockets

Preheat the oven to 375°F (190°C).

Divide the chilled dough into six equal portions.

Roll each portion into a circle approximately 5–6 inches wide.

Place a spoonful of scrambled eggs and sausage onto one side of each circle.

Add shredded cheddar cheese and chopped green onions.

Fold the dough over the filling to create a half-moon shape.

Press the edges firmly with a fork to seal.

Bake the Breakfast Pockets

Arrange the pockets on a baking sheet lined with parchment paper.

Whisk together the remaining egg and water to prepare the egg wash.

Brush each pocket evenly with egg wash.

Cut a small steam vent into the top of each pocket.

Bake for approximately 20–25 minutes, or until golden brown and thoroughly cooked.

Allow to cool for five minutes before serving.

Notes

Sourdough Discard: Use sourdough discard at approximately 100% hydration for the intended dough consistency.

Cold Butter: Keep the butter cold to help create a tender, slightly flaky crust.

Avoid Overfilling: Adding too much filling may cause the pockets to open during baking.

Vegetarian Option: Replace the breakfast sausage with sautéed mushrooms, spinach, or additional bell peppers.

Storage: Refrigerate cooked breakfast pockets in an airtight container for up to 3–4 days.

Freezing: Wrap cooled pockets individually and freeze for up to 2–3 months for best quality.

Reheating: Reheat in a 350°F (175°C) oven until thoroughly heated. Leftovers should reach 165°F (74°C).
