Description

Easy Sheet Pan Chicken Pitas made with juicy Mediterranean-seasoned chicken, colorful roasted vegetables, warm pita bread, creamy tzatziki, feta, and fresh toppings. A simple and flavorful weeknight dinner with minimal cleanup.

1 ½ pounds boneless skinless chicken breasts or thighs, cut into bite-size pieces
2 tablespoons olive oil
2 tablespoons fresh lemon juice
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon paprika
½ teaspoon ground cumin
½ teaspoon salt
¼ teaspoon black pepper
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 medium red onion, sliced
1 small zucchini, sliced
1 cup cherry tomatoes
6 pita breads
1 cup tzatziki sauce
1 cucumber, chopped
½ cup crumbled feta cheese
¼ cup Kalamata olives, sliced
2 tablespoons fresh parsley or dill, chopped
1 lemon, cut into wedges


Instructions

Preheat the oven to 425°F (220°C). Lightly grease a large sheet pan or line it with parchment paper.

Place the chicken in a large bowl. Add olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and black pepper. Toss until the chicken is evenly coated.

Add the bell peppers, red onion, zucchini, and cherry tomatoes to the sheet pan. Arrange the seasoned chicken among the vegetables in a single layer without overcrowding the pan.

Roast for 18 to 25 minutes, tossing the vegetables halfway through, until the chicken is fully cooked and the vegetables are tender and lightly browned. Chicken should reach an internal temperature of 165°F (74°C).

Warm the pita bread during the final few minutes of cooking.

Spread tzatziki inside each warm pita. Fill with roasted chicken and vegetables, then add cucumber, feta, Kalamata olives, and fresh parsley or dill.

Serve immediately with fresh lemon wedges.

Notes

Cut the chicken into evenly sized pieces so it cooks at the same rate.

Avoid overcrowding the sheet pan because excess moisture can prevent the chicken and vegetables from browning.

Boneless skinless chicken thighs can be substituted for chicken breasts.

Store the cooked chicken, vegetables, tzatziki, fresh toppings, and pita separately when preparing the recipe ahead.

Add tzatziki and other moist toppings immediately before serving to help prevent soggy pita bread.
