Ingredients
Pumpkin Muffin Batter
1¾ cups all-purpose flour
1 cup pumpkin puree
½ cup brown sugar, packed
¼ cup granulated sugar
2 large eggs
½ cup vegetable oil
¼ cup milk
1 teaspoon vanilla extract
1 teaspoon baking powder
½ teaspoon baking soda
1½ teaspoons pumpkin pie spice
½ teaspoon ground cinnamon
½ teaspoon salt
Pecan Streusel Topping
½ cup chopped pecans
⅓ cup all-purpose flour
⅓ cup brown sugar, packed
3 tablespoons cold unsalted butter, cubed
½ teaspoon ground cinnamon
1 pinch salt
Optional Maple Glaze
½ cup powdered sugar
1 tablespoon pure maple syrup
1–2 teaspoons milk
Instructions
Prepare the Pecan Streusel Topping
In a medium bowl, combine the flour, brown sugar, cinnamon, salt, and chopped pecans. Add the cold butter and mix with a fork or your fingertips until coarse crumbs form. Refrigerate the streusel while preparing the muffin batter.
Preheat the Oven
Preheat your oven to 375°F (190°C). Line a standard 12-cup muffin pan with paper liners.
Mix the Dry Ingredients
In a large mixing bowl, whisk together the flour, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt until evenly combined.
Combine the Wet Ingredients
In a separate bowl, whisk together the pumpkin puree, brown sugar, granulated sugar, eggs, vegetable oil, milk, and vanilla extract until smooth.
Prepare the Muffin Batter
Gradually add the dry ingredients to the wet ingredients. Gently fold with a spatula until just combined. Avoid overmixing to keep the muffins soft and fluffy.
Fill the Muffin Cups
Divide the pumpkin batter evenly among the prepared muffin liners, filling each approximately three-quarters full. Sprinkle the chilled pecan streusel generously over each muffin.
Bake the Muffins
Bake for 20–25 minutes or until the muffin tops are golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs.
Cool the Muffins
Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack.
Prepare the Maple Glaze
In a small bowl, whisk together the powdered sugar, maple syrup, and milk until smooth. Adjust the consistency by adding a little more milk if necessary.
Glaze and Serve
Drizzle the maple glaze over the cooled pumpkin streusel muffins. Serve and enjoy.
Notes
Pumpkin Puree: Use 100% pure pumpkin puree rather than pumpkin pie filling for the best flavor and texture.
Avoid Overmixing: Mix the muffin batter just until the dry ingredients are incorporated to prevent dense muffins.
Cold Butter: Keep the butter cold when preparing the pecan streusel topping to create a crunchy, crumbly texture.
Storage: Store completely cooled muffins in an airtight container at room temperature for up to 2 days or refrigerate for 4–5 days.
Freezing: Freeze muffins in airtight freezer-safe packaging for up to 3 months. Thaw before serving.
Variations: Add chocolate chips, substitute walnuts for pecans, or omit the maple glaze for a less sweet version.
Serving Suggestion: Enjoy these pumpkin streusel muffins with coffee, tea, or warm milk.
