Ingredients
For the Cookie Dough
1½ cups all-purpose flour
½ cup unsalted butter, softened
⅓ cup granulated sugar
¼ cup brown sugar
1 large egg yolk
1 teaspoon vanilla extract
¼ teaspoon baking powder
¼ teaspoon salt
For the Pumpkin Pie Filling
½ cup pure pumpkin puree
2 tablespoons brown sugar
1 tablespoon heavy cream
1 large egg yolk
½ teaspoon pumpkin pie spice
¼ teaspoon vanilla extract
Optional Toppings
Whipped cream
Ground cinnamon
Powdered sugar
Chopped pecans
Cream cheese frosting
Instructions
Step 1: Prepare the Cookie Dough
In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until light and creamy.
Add the egg yolk and vanilla extract. Mix until well combined.
In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
Gradually add the dry ingredients to the butter mixture, mixing gently until a soft cookie dough forms.
Step 2: Prepare the Pumpkin Filling
In another mixing bowl, combine the pumpkin puree, brown sugar, heavy cream, egg yolk, pumpkin pie spice, and vanilla extract.
Stir until the filling becomes smooth and creamy.
Step 3: Shape the Cookies
Preheat your oven to 350°F (175°C).
Line a baking sheet with parchment paper.
Roll the cookie dough into approximately 1-inch balls and arrange them on the prepared baking sheet, leaving about 2 inches between each cookie.
Use your thumb or the back of a measuring spoon to create an indentation in the center of each dough ball.
Step 4: Add the Pumpkin Filling
Spoon approximately 1 teaspoon of pumpkin filling into each cookie indentation.
Avoid overfilling to prevent the pumpkin mixture from overflowing during baking.
Step 5: Bake the Cookies
Place the baking sheet in the preheated oven.
Bake for approximately 13 to 17 minutes, or until the cookie edges become lightly golden and the pumpkin filling is set.
Check that the egg-containing filling reaches an internal temperature of 160°F (71°C).
Step 6: Cool and Decorate
Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes.
Transfer the cookies to a wire rack and allow them to cool completely.
Decorate with whipped cream, ground cinnamon, powdered sugar, or chopped pecans before serving.
Notes
Pumpkin Puree: Use pure pumpkin puree rather than prepared pumpkin pie filling for better control over sweetness and consistency.
Cookie Texture: Avoid overmixing the dough to maintain soft, tender cookies.
Chilling the Dough: If the cookie dough becomes sticky, refrigerate it for 15 to 20 minutes before shaping.
Baking Tip: Avoid overfilling the cookie centers because the pumpkin filling may spread during baking.
Storage: Store cooled cookies in an airtight container in the refrigerator for 3 to 4 days.
Freezing: Freeze undecorated cookies in a freezer-safe container for up to 2 months for best quality.
Serving Suggestion: Add whipped cream just before serving for the best appearance and texture.
Recipe Testing: Ingredient proportions, baking times, and yield are estimates and should be confirmed through testing before publication.
