Description
Sweet and savory Pineapple Chicken and Rice made with tender chicken, juicy pineapple, colorful bell peppers, fluffy jasmine rice, and a sticky homemade pineapple sauce. This easy family-friendly dinner is ready in about 30 minutes and is perfect for busy weeknights.
Ingredients
1 ½ pounds boneless skinless chicken breast, cut into bite-sized pieces
2 cups pineapple chunks, fresh or canned
1 cup pineapple juice
2 cups cooked jasmine rice
1 red bell pepper, chopped
1 small onion, chopped
2 cloves garlic, minced
1 teaspoon fresh ginger, minced
2 tablespoons vegetable oil
¼ cup soy sauce
2 tablespoons honey
1 tablespoon rice vinegar
1 teaspoon sesame oil
1 tablespoon cornstarch
2 tablespoons cold water
2 green onions, sliced
1 teaspoon sesame seeds
Salt and black pepper to taste
Instructions
Cook the jasmine rice according to the package directions, then fluff it with a fork and keep warm.
Heat vegetable oil in a large skillet over medium-high heat.
Season the chicken lightly with salt and black pepper. Add it to the skillet and cook until golden brown and fully cooked through.
Add the chopped onion and bell pepper. Cook for 3 to 4 minutes until slightly softened.
Stir in the garlic and ginger and cook for about 30 seconds until fragrant.
Add the pineapple chunks and cook for 1 to 2 minutes.
Combine the pineapple juice, soy sauce, honey, rice vinegar, and sesame oil. Pour the mixture into the skillet and stir well.
Mix the cornstarch and cold water in a small bowl until smooth. Stir the mixture into the skillet.
Simmer for 2 to 3 minutes, stirring occasionally, until the sauce becomes thick and glossy.
Serve the pineapple chicken over warm jasmine rice.
Garnish with sliced green onions and sesame seeds before serving.
Notes
Chicken thighs can be used instead of chicken breast for a richer flavor.
Fresh or canned pineapple works well. If using canned pineapple, choose pineapple packed in juice and reserve the juice for the sauce.
Add red pepper flakes or chili sauce if you prefer a spicy pineapple chicken.
Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days.
Chicken should reach an internal temperature of 165°F or 74°C before serving.
