Description

This Dump And Bake Salmon White Bean Tomato Dinner is an easy, healthy, and flavorful one-pan meal featuring tender salmon fillets, creamy cannellini beans, juicy cherry tomatoes, fresh spinach, and Mediterranean seasonings. Perfect for busy weeknights, this protein-rich dinner requires just 10 minutes of preparation and minimal cleanup

Ingredients

Scale

4 salmon fillets, approximately 6 ounces each, fresh or thawed

2 cans cannellini beans, 15 ounces each, drained and rinsed

1 pint cherry tomatoes, washed

3 cups fresh baby spinach

2 tablespoons olive oil

3 garlic cloves, minced

1 lemon, juice and zest

1 teaspoon Italian seasoning

Salt and black pepper to taste

Instructions

Step 1: Preheat the Oven

Preheat your oven to 400°F (200°C). Lightly grease a large oven-safe baking dish with olive oil.

Step 2: Prepare the Beans and Tomatoes

Add the drained cannellini beans, cherry tomatoes, minced garlic, olive oil, and Italian seasoning to the baking dish. Toss gently until all ingredients are evenly coated.

Step 3: Add the Salmon

Arrange the salmon fillets over the bean and tomato mixture in a single layer. Drizzle with fresh lemon juice, sprinkle with lemon zest, and season with salt and black pepper.

Step 4: Bake the Salmon

Place the baking dish in the preheated oven and bake for approximately 15 to 20 minutes, depending on the thickness of the salmon fillets. Use a food thermometer to confirm the salmon reaches an internal temperature of 145°F (63°C).

Step 5: Add Spinach and Serve

Remove the baking dish from the oven. Stir the fresh baby spinach into the hot bean and tomato mixture until wilted. Serve immediately with your favorite side dish.

Notes

Salmon: Use fresh or completely thawed salmon fillets for even cooking.

White Beans: Cannellini beans work best, but Great Northern beans or butter beans are excellent substitutes.

Tomatoes: Cherry tomatoes provide natural sweetness and moisture. Grape tomatoes also work well.

Extra Flavor: Add Kalamata olives, crumbled feta cheese, red pepper flakes, or fresh basil for additional Mediterranean flavor.

Avoid Overcooking: Check the internal temperature of the salmon to prevent dryness.

Storage: Refrigerate leftovers in airtight containers within two hours of cooking. Enjoy within 1 to 2 days for the best quality.

Reheating: Reheat gently with a splash of vegetable broth or water until the center reaches 165°F (74°C).
