Description

Creamy Pumpkin Chicken Soup is a comforting, flavorful recipe made with tender shredded chicken, smooth pumpkin puree, fresh vegetables, and warming spices. This easy homemade soup features a rich, velvety broth and is ready in approximately 40 minutes. Perfect for cozy fall dinners, busy weeknights, and family meals.

Ingredients

Scale

2 cups cooked shredded chicken

1 can (15 ounces) pure pumpkin puree

3 cups low-sodium chicken broth

½ cup heavy cream

2 tablespoons olive oil or butter

1 medium yellow onion, diced

3 garlic cloves, minced

1 medium carrot, diced

1 celery stalk, diced

½ teaspoon ground cumin

½ teaspoon smoked paprika

⅛ teaspoon ground nutmeg

Salt and black pepper to taste

Fresh parsley for garnish

Toasted pumpkin seeds (optional)

Instructions

Step 1: Sauté the Vegetables

Heat olive oil or butter in a large pot over medium heat. Add the diced onion, carrot, and celery. Cook for 5–7 minutes until softened. Stir in the minced garlic and cook for another minute until fragrant.

Step 2: Add Pumpkin and Spices

Add the pumpkin puree, ground cumin, smoked paprika, and nutmeg. Stir thoroughly and cook for 1–2 minutes to develop the flavors.

Step 3: Add Chicken Broth

Gradually pour in the chicken broth while stirring. Mix until the pumpkin puree combines smoothly with the broth. Bring to a gentle simmer.

Step 4: Simmer the Soup

Reduce the heat to medium-low and simmer for 10–15 minutes, stirring occasionally, until the vegetables are tender and the flavors are well combined.

Step 5: Blend Until Creamy

Use an immersion blender to puree the soup until smooth and creamy. For a chunkier texture, blend only part of the mixture.

Step 6: Add Chicken and Cream

Stir in the cooked shredded chicken and heavy cream. Reduce the heat to low and cook for approximately 5 minutes, stirring gently, until the chicken is heated through. Avoid vigorous boiling.

Step 7: Season and Serve

Season with salt and black pepper to taste. Ladle the soup into bowls and garnish with fresh parsley, toasted pumpkin seeds, or a swirl of cream. Serve warm.

Notes

Pumpkin Puree: Use plain canned pumpkin puree rather than pumpkin pie filling, which contains added sugar and spices.

Chicken: Cooked shredded chicken breast, chicken thighs, or rotisserie chicken work well.

Dairy-Free Option: Replace heavy cream with full-fat coconut milk.

Extra Creaminess: Blend the pumpkin and vegetables thoroughly before adding the chicken.

Soup Consistency: Add extra chicken broth for a thinner soup or simmer uncovered for a thicker consistency.

Storage: Refrigerate leftovers in airtight containers for up to 3–4 days.

Freezing: Freeze for 2–3 months for best quality. For better texture, add the cream after thawing and reheating.

Reheating: Reheat gently on the stovetop, stirring frequently, until the soup reaches 165°F (74°C).
