Description
Flavor-packed Thai baked chicken meatballs made with red curry paste, garlic, lime, and herbs, baked to perfection and served with a sweet chili dipping sauce. Perfect for appetizers, meal prep, or a main course.
Ingredients
1 lb ground chicken
1/2 cup panko breadcrumbs
1 large egg
2 green onions, finely sliced
2 garlic cloves, minced
1 tablespoon fresh ginger, minced
1 tablespoon red curry paste
1 tablespoon fish sauce
1 tablespoon soy sauce
1 teaspoon brown sugar
1/2 teaspoon chili flakes (optional)
Zest of 1 lime
1 tablespoon chopped cilantro
Optional: grated carrots or zucchini, chopped peanuts
Instructions
Preheat oven to 400°F and line a baking sheet with parchment paper
In a large bowl, mix ground chicken, breadcrumbs, egg, garlic, ginger, onions, curry paste, fish sauce, soy sauce, sugar, lime zest, and cilantro
Mix gently to combine, being careful not to overwork the meat
Use damp hands or a scoop to form 1–1.5 inch meatballs
Place evenly on the prepared baking sheet
Bake for 18 to 22 minutes or until golden and internal temperature reaches 165°F
For extra browning, broil for 2 to 3 minutes at the end
Serve warm with your favorite dipping sauce
