Description
A sweet and savory Sticky Chicken Bowl featuring glazed chicken over fluffy white rice, paired with broccoli and drizzled with creamy sauce. Perfect for meal prep or quick dinners.
Ingredients
1 lb boneless skinless chicken thighs
2 tablespoons soy sauce
2 tablespoons honey
1 tablespoon brown sugar
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
1 tablespoon rice vinegar
1 teaspoon sesame oil
1 tablespoon cornstarch + 2 tablespoons water (slurry)
2 cups cooked jasmine or white rice
1 ½ cups steamed broccoli florets
1 tablespoon sesame seeds
2 tablespoons sliced green onions
2 tablespoons spicy mayo or sriracha mayo (optional)
Instructions
In a bowl, whisk together soy sauce, honey, brown sugar, garlic, ginger, rice vinegar, and sesame oil.
Add chicken thighs and marinate for at least 30 minutes.
Heat a skillet over medium heat and cook chicken until browned and cooked through.
Remove chicken and set aside. In the same pan, pour in the remaining marinade and simmer.
Add cornstarch slurry and stir until sauce thickens.
Slice the chicken and return it to the pan to coat with the sticky sauce.
In serving bowls, layer rice, broccoli, and sticky chicken.
Drizzle with spicy mayo, and sprinkle sesame seeds and green onions on top.
Notes
You can use chicken breast instead of thighs for a leaner option.
Add other vegetables like carrots or snap peas for more variety.
Make it low-carb by using cauliflower rice.
