A cheesy and fresh Salsa Fresca Chicken Bake made with tender chicken breasts, homemade pico de gallo, and melted Monterey Jack cheese. This one-dish Tex-Mex meal is quick, low-carb, and packed with bold flavor, perfect for easy weeknight dinners.
Ingredients
2 lbs chicken breast, boneless and skinless
1/4 tsp cumin
1/4 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
2 cups fresh pico de gallo
1 cup Monterey Jack cheese, shredded
2 tbsp chopped fresh cilantro (optional, for garnish)
Instructions
Preheat the oven to 375°F
Place chicken breasts in a single layer in a baking dish
Sprinkle chicken evenly with cumin, garlic powder, salt, and pepper
Spoon fresh pico de gallo over each chicken breast
Top with shredded cheese
Bake uncovered for 35 to 45 minutes or until internal temperature reaches 165°F
Garnish with chopped cilantro before serving
