These peanut butter cookie bars are soft chewy and packed with flavor A perfect treat for peanut butter and chocolate lovers easy to make and great for any occasion
Ingredients
1 cup 225 g unsalted butter softened
1 cup 250 g creamy peanut butter
1 ½ cups 300 g brown sugar
½ cup 100 g granulated sugar
2 eggs plus 1 egg yolk
2 teaspoons vanilla extract
2 ¾ cups 345 g all-purpose flour
1 teaspoon cornstarch
½ teaspoon baking powder
¼ teaspoon salt
2 tablespoons milk
2 cups 360 g semisweet or milk chocolate chips
Instructions
Preheat the oven to 350°F 175°C and line a 9×9-inch baking pan with parchment paper
Cream the butter peanut butter and sugars until light and fluffy
Add the eggs and vanilla and mix well
In a separate bowl whisk together the flour cornstarch baking powder and salt then gradually add to the wet ingredients
Add the milk to soften the dough
Gently fold in the chocolate chips using a spatula
Spread the dough evenly into the prepared baking pan
Bake for 30 to 35 minutes until the edges are golden and a toothpick inserted in the center comes out with moist crumbs
Let cool completely before cutting into bars
Notes
Do not overbake to keep the bars soft and chewy
Store in an airtight container at room temperature for up to five days or freeze for up to three months
For extra flavor add chopped nuts caramel chips or drizzle with melted chocolate
