Description
These moist and fruity peach muffins are perfect for breakfast, snacks, or a light dessert. Made with fresh, canned, or frozen peaches and warmly spiced with cinnamon, they’re easy to bake and full of summer flavor.
Ingredients
3 cups all-purpose flour
1 tablespoon ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
2 cups sugar (white or half white and half brown)
1¼ cups vegetable oil
3 large eggs
2 teaspoons vanilla extract (optional)
2 cups diced peaches (fresh, canned, or frozen and thawed)
Instructions
Preheat oven to 400°F (200°C). Line or grease a muffin tin.
In a large bowl, whisk together flour, cinnamon, baking soda, and salt.
In a separate bowl, mix sugar, oil, eggs, and vanilla (if using) until well combined.
Add wet ingredients to dry ingredients and stir until just combined.
Fold in the diced peaches gently.
Spoon the batter into muffin cups, filling each about ¾ full.
Optional: Top with cinnamon-sugar or crumb topping.
Bake for 20–25 minutes, or until a toothpick inserted in the center comes out clean.
Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
If using canned peaches, be sure to drain and pat them dry.
You can substitute half the oil with applesauce or Greek yogurt for a lighter version.
Add-ins like chopped pecans or blueberries work well in this recipe.
These muffins freeze beautifully. Wrap individually and freeze for up to 3 months.
