Description

A moist and buttery peach coffee cake filled with juicy peaches and topped with a golden cinnamon crumb topping. Perfect for breakfast, brunch, or dessert.


Ingredients

1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup unsalted butter, softened
¾ cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
½ cup sour cream or plain Greek yogurt
1 ½ cups fresh or canned peaches, peeled and chopped

Crumb Topping:
½ cup brown sugar
⅓ cup all-purpose flour
1 teaspoon ground cinnamon
3 tablespoons unsalted butter, softened

Optional Vanilla Glaze:
½ cup powdered sugar
1 tablespoon milk
¼ teaspoon vanilla extract


Instructions

Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round or 8×8-inch square baking pan.

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

In a separate large bowl, cream the butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla and sour cream.

Gradually add the dry ingredients into the wet mixture until just combined. Gently fold in the chopped peaches.

Pour the batter into the prepared pan and spread evenly.

In a small bowl, mix brown sugar, flour, and cinnamon. Cut in the softened butter with a fork until crumbly. Sprinkle the topping over the batter.

Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean.

 

Let cool before serving. Drizzle with glaze if desired.

Notes

You can use frozen peaches (thawed and drained) or canned peaches (well-drained) instead of fresh.
This recipe doubles well for a 9×13 pan.
Add chopped nuts like pecans to the topping for extra crunch.
