Medium onion diced
Garlic minced
Ginger grated
Tomato paste
Can tomato sauce
Beef broth or water
Large potatoes peeled and chopped
Large carrots peeled and sliced
Celery stalks chopped optional
Hawaiian sea salt or kosher salt
Black pepper
Soy sauce optional for added umami
Sugar optional to balance acidity


Instructions

Heat oil in a large pot over medium-high heat Add beef chunks and brown them on all sides Remove from the pot and set aside

In the same pot add onions garlic and ginger Sauté until fragrant Stir in tomato paste and cook for another minute to enhance its flavor

Return the browned beef to the pot Add tomato sauce beef broth and soy sauce if using Stir well Bring the stew to a boil then reduce the heat to low Cover and let it simmer stirring occasionally

Add potatoes carrots celery salt and pepper to the pot Continue simmering until vegetables are tender and the beef is melt-in-your-mouth soft

Taste and adjust seasoning with more salt pepper or a pinch of sugar if needed Serve hot over steamed rice or with Hawaiian sweet rolls Enjoy
