Ingredients
4 cod fillets (6 oz each)
1/4 cup soy sauce
2 tablespoons honey
2 tablespoons rice vinegar
1 tablespoon freshly grated ginger
2 garlic cloves, minced
1 tablespoon sesame oil
2 green onions, thinly sliced (for garnish)
1 tablespoon sesame seeds (for garnish)
Fresh cilantro, chopped (for garnish)
Lime wedges (for serving)
Instructions
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a small bowl, whisk together soy sauce, honey, rice vinegar, grated ginger, garlic, and sesame oil.
Place cod fillets on the baking sheet and brush them generously with the glaze.
Let the cod rest for 5 minutes to absorb the flavors.
Bake for 12–15 minutes or until the fish flakes easily with a fork and appears opaque.
Garnish with green onions, cilantro, sesame seeds, and a squeeze of lime before serving.
Notes
For a thicker glaze, simmer the sauce on low heat for 3–5 minutes before applying.
Use fresh cod fillets for best results, but fully thawed frozen cod also works well.
Pair with jasmine rice or a light cucumber salad for a complete meal.
To make it gluten-free, use tamari or coconut aminos instead of soy sauce.
