Fluffy, golden Strawberry Waffles made with buttermilk, Greek yogurt, and fresh strawberries. A sweet, easy breakfast for busy mornings or brunch!
Ingredients
2 ½ cups all-purpose flour
4 teaspoons baking powder
¾ teaspoon salt
2 cups buttermilk
½ cup vanilla Greek-style yogurt
½ cup butter, melted
2 eggs, beaten
1 ½ tablespoons white sugar
¾ cup chopped strawberries, or more to taste
Instructions
Preheat and grease your waffle iron according to the manufacturer’s instructions
Sift flour, baking powder, and salt together in a bowl
Whisk buttermilk, yogurt, melted butter, eggs, and sugar in a separate bowl
Stir the wet mixture into the dry ingredients until smooth
Gently fold chopped strawberries into the batter
Pour about 1/3 cup of batter into preheated waffle iron and cook until golden, about 5–7 minutes
Repeat with remaining batter
Notes
Use fresh or frozen strawberries (if frozen, thaw and drain first)
Don’t overmix the batter—some lumps are fine
Let cooked waffles rest on a wire rack to stay crisp
Freeze extras between parchment for up to 3 months
