A warm, comforting peach crisp made with juicy peaches, a hint of cinnamon, and a golden oat topping. Perfect for any season, and easy to make with fresh, frozen, or canned peaches.
Ingredients
6–8 fresh peaches, sliced (or use frozen/canned)
¼ cup granulated sugar
1 tbsp lemon juice
½ tsp vanilla extract
1 tbsp cornstarch
½ tsp ground cinnamon
Pinch of salt
¾ cup all-purpose flour (or gluten-free blend)
½ cup old-fashioned oats
⅓ cup brown sugar
¼ cup granulated sugar
½ tsp ground cinnamon
Pinch of salt
6 tbsp cold unsalted butter
½ tsp vanilla extract
Instructions
Preheat your oven to 375°F (190°C).
In a large mixing bowl, toss peach slices with granulated sugar, lemon juice, vanilla extract, cornstarch, cinnamon, and a pinch of salt until well combined.
Pour the peach mixture into a greased 9×9-inch baking dish, spreading it out evenly.
In another bowl, mix together the flour, oats, brown sugar, granulated sugar, cinnamon, and salt.
Add the cold cubed butter to the dry ingredients. Use a pastry cutter or fork to blend the butter in until the mixture resembles coarse crumbs. Stir in the vanilla extract.
Sprinkle the oat topping evenly over the peach filling.
Bake for 35 to 40 minutes, or until the topping is golden brown and the peach filling is bubbling around the edges.
Allow the peach crisp to cool for 10–15 minutes before serving. It’s delicious served warm with vanilla ice cream or whipped cream.
Notes
You can use canned or frozen peaches when fresh ones aren’t in season. Make sure to drain them well.
To make this recipe gluten-free, use a certified gluten-free oat and flour blend.
This crisp can be made ahead and stored in the fridge for up to 4 days. Reheat in the oven for best texture.
