This Spicy Gochujang Chicken Rice Bowl is a flavorful and easy Asian dish made with tender, juicy chicken glazed in a spicy-sweet gochujang sauce. Served over fluffy white rice with garlic stir-fried greens, this dish is perfect for a quick and satisfying meal.
Ingredients
For the Chicken
2 tbsp gochujang (Korean red chili paste)
1 tbsp soy sauce
1 tbsp honey or maple syrup
1 tbsp sesame oil
2 cloves garlic, minced
½ tsp ginger, grated
½ tsp rice vinegar
½ tsp black pepper
1 tbsp vegetable oil (for cooking)
2 boneless, skinless chicken thighs
For the Garlic Stir-Fried Greens
2 cups Chinese broccoli (or spinach/kale)
2 cloves garlic, minced
1 tsp soy sauce
½ tsp sesame oil
½ tsp sesame seeds (for garnish)
For Serving
1 cup cooked white rice
1 tsp sesame seeds
1 green onion, chopped
Instructions
Marinate the Chicken
In a bowl, mix gochujang, soy sauce, honey, sesame oil, garlic, ginger, rice vinegar, and black pepper. Coat the chicken in the marinade and let it sit for 15–20 minutes.
Cook the Chicken
Heat a pan over medium heat with vegetable oil. Cook the chicken for about 4–5 minutes per side until fully cooked and caramelized. Remove from heat and let it rest before slicing.
Stir-Fry the Greens
In the same pan, add minced garlic and sauté for 30 seconds. Add Chinese broccoli and stir-fry for 2–3 minutes until wilted. Add soy sauce and sesame oil, then toss well.
Assemble the Bowl
Place a serving of steamed white rice in a bowl. Arrange the sliced gochujang chicken on top and add the stir-fried greens.
Garnish & Serve
Sprinkle with sesame seeds and chopped green onions. Serve hot and enjoy!
Notes
Spice Level – Adjust the gochujang to control the heat. Add more honey for a sweeter balance.
