Tender, flavorful crockpot chicken pot roast made with juicy chicken thighs, hearty vegetables, and a savory gravy. This slow cooker recipe is perfect for cozy weeknight dinners or Sunday family meals.
Ingredients
1.5 lbs boneless, skinless chicken thighs or breasts
3 carrots, peeled and sliced
3 stalks celery, sliced
1 medium yellow onion, diced
4 cloves garlic, minced
8 oz baby bella mushrooms, sliced (optional)
2 cups low-sodium beef broth or chicken broth
2 tsp Worcestershire sauce
1 oz pot roast seasoning mix or homemade equivalent
1 tsp salt
1/2 tsp black pepper
1/4 tsp paprika
1 tsp dried parsley
2 rosemary sprigs
1 dried bay leaf
4 tbsp unsalted butter, sliced
2 tbsp cornstarch (optional, for thickening)
2 tbsp broth from the crockpot (for slurry)
Instructions
Add chopped onions, carrots, celery, garlic, and mushrooms to the bottom of a slow cooker.
Place chicken thighs or breasts on top of the vegetables.
Sprinkle the seasoning mix, salt, pepper, paprika, and parsley over the chicken and vegetables.
Pour in beef or chicken broth and Worcestershire sauce.
Top with sliced butter, rosemary sprigs, and bay leaf.
Cover and cook on low for 4 to 6 hours, or until chicken is tender and cooked through.
Remove chicken, shred it with two forks, and set aside.
Remove bay leaf and rosemary sprigs.
If thickening, combine cornstarch with 2 tablespoons of hot broth from the slow cooker to make a slurry. Stir into the pot, cover, and cook on high for 20 to 30 minutes until thickened.
Return shredded chicken to the crockpot, stir to combine, and serve over mashed potatoes, noodles, or rice.
Notes
Use chicken thighs for the juiciest, most flavorful results.
You can substitute the pot roast seasoning with a mix of garlic powder, onion powder, dried thyme, parsley, salt, and black pepper.
Store leftovers in an airtight container for up to 3 days in the refrigerator or 3 months in the freezer.
Frozen chicken can be used if fully thawed before cooking.
