Description
A rich and comforting creamy spinach chicken casserole made with tender chicken, sautéed spinach, and a cheesy cream sauce. Perfect for a cozy family dinner, meal prep, or freezer-friendly meals.
Ingredients
2 cups cooked shredded chicken (breast or thighs)
3 cups fresh spinach (or 1½ cups frozen, thawed and drained)
1 cup cream cheese (softened)
½ cup sour cream or Greek yogurt
¾ cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
2 cloves garlic (minced)
½ teaspoon salt
¼ teaspoon black pepper
Optional: ½ cup cooked bacon bits, ½ cup sautéed mushrooms, ½ teaspoon red pepper flakes
Instructions
Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
Sauté spinach in a pan until wilted or drain thawed frozen spinach well.
In a large bowl, mix cream cheese, sour cream, garlic, salt, and pepper until smooth.
Fold in the cooked chicken and spinach.
Transfer the mixture to the baking dish and spread evenly.
Top with mozzarella and Parmesan cheese.
Bake uncovered for 25–30 minutes until bubbly and golden brown on top.
Garnish with fresh parsley if desired.
Let cool slightly before serving.
Notes
Use rotisserie chicken to save time.
Make it low-carb by skipping any breadcrumb topping.
Drain spinach thoroughly to prevent a watery casserole.
You can prepare it a day in advance and bake later.
Freezes well before or after baking.
