Description
A rich, tangy, and creamy one-skillet chicken dinner made with seared chicken breasts, parmesan cream sauce, and spicy pepperoncini peppers. Perfect for busy weeknights or comforting low-carb meals.
Ingredients
2 tbsp butter
2 lbs chicken breasts or tenders, sliced
1 tsp salt
1 tsp black pepper
1 white onion, diced
2 tbsp garlic, minced
½ cup roasted red peppers, sliced
½ cup chicken stock
1 cup heavy cream
½ cup grated parmesan cheese
1 tbsp Italian seasoning
½ cup sliced pepperoncini peppers
2 tbsp fresh parsley or basil, chopped (for garnish)
Pinch of red pepper flakes (optional)
Instructions
Season chicken with salt and pepper.
Heat butter in a large skillet over medium-high heat.
Add chicken and sear until golden brown on both sides, about 6–8 minutes. Remove and set aside.
Add diced onion to the same skillet and cook until softened, about 4 minutes.
Stir in garlic and roasted red peppers. Cook until fragrant, about 1–2 minutes.
Deglaze the pan with chicken stock, scraping up browned bits.
Add pepperoncini slices and return chicken to the pan. Simmer for 5–7 minutes until chicken is fully cooked.
Reduce heat to low. Stir in heavy cream, parmesan, and Italian seasoning.
Simmer gently until sauce thickens, about 3–4 minutes. Do not boil.
Garnish with chopped parsley or basil and optional red pepper flakes. Serve hot.
Notes
For a dairy-free version, substitute coconut cream and vegan parmesan.
Great over pasta, mashed potatoes, or cauliflower rice.
Control the heat by adjusting the amount of pepperoncini or using mild ones.
