Creamy Cottage Cheese Chicken is a high-protein, low-fat dinner recipe made with tender chicken breasts baked in a velvety cottage cheese and parmesan sauce. It’s a wholesome, easy-to-make dish the whole family will love.
Ingredients
2 large chicken breasts, butterflied
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons olive oil
½ cup milk (dairy or unsweetened almond milk)
1½ cups low-fat cottage cheese
⅓ cup grated parmesan cheese
2 teaspoons cornstarch
½ large onion, chopped
3 cloves garlic, minced
2 teaspoons Italian seasoning
Instructions
Preheat oven to 375°F (190°C).
Season the chicken breasts with salt and pepper.
Heat 1 tablespoon olive oil in a skillet over medium-high heat. Sear the chicken for 3–4 minutes per side until golden brown. Remove and set aside.
In a blender, combine cottage cheese, milk, parmesan, cornstarch, and a pinch of salt and pepper. Blend until smooth.
In the same skillet, add the remaining olive oil and sauté onion for 2–3 minutes. Add garlic and Italian seasoning; cook for 30 seconds.
Pour in the blended cottage cheese sauce and stir to deglaze the pan.
Transfer the chicken into a deep glass baking dish and pour the sauce over the top.
Bake uncovered for 20–25 minutes, or until the sauce is bubbling and the chicken is fully cooked.
Let rest for 5 minutes before serving.
Notes
To make this dish even creamier, add ½ cup shredded mozzarella on top before baking.
Pairs well with roasted vegetables, rice, or a fresh green salad.
For a spicy version, add red pepper flakes or a pinch of cayenne to the sauce.
