Description
Juicy seared chicken breasts topped with a sweet and tangy blueberry thyme glaze. This elegant dish is easy to make and perfect for weeknight meals or dinner parties.
Ingredients
4 boneless, skinless chicken breasts (6 oz each)
1 cup fresh blueberries
2 tbsp balsamic vinegar
1 tbsp honey
2 tsp fresh thyme leaves (or 1 tsp dried thyme)
1 tbsp olive oil
Salt, to taste
Freshly ground black pepper, to taste
Instructions
Season chicken breasts with salt and black pepper.
Heat olive oil in a large skillet over medium-high heat.
Sear chicken for 6–7 minutes on each side until cooked through and golden brown.
In a bowl, mix blueberries, balsamic vinegar, honey, and thyme.
Add the blueberry mixture to the skillet.
Simmer for 3–4 minutes until sauce thickens slightly.
Garnish with extra blueberries and thyme before serving.
Notes
You can use frozen blueberries; just thaw and drain them first.
For extra flavor, marinate the chicken in olive oil, thyme, and lemon juice for 30 minutes before cooking.
Pair with coconut rice or roasted vegetables for a complete meal.
