Soft, buttery almond cookies with a tender crumb and irresistible crunch from sliced almonds. This easy almond cookies recipe is gluten-free-friendly and perfect for holidays, gifting, or everyday treats.
Ingredients
1 ½ cups almond flour
½ cup unsalted butter, softened
⅓ cup granulated sugar
1 large egg
1 teaspoon almond extract
¼ teaspoon salt
¼ cup sliced almonds (for topping)
Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, cream the softened butter and sugar until light and fluffy.
Add the egg and almond extract. Mix until well combined.
Stir in the almond flour and salt until a soft dough forms.
Scoop 1 tablespoon portions of dough and roll into balls. Place on the prepared baking sheet.
Gently flatten each dough ball and press a few sliced almonds on top.
Bake for 10–12 minutes, or until edges are golden brown.
Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Cookies will be soft when first removed from the oven but will firm up as they cool.
For extra crunch, sprinkle with raw sugar before baking.
Store in an airtight container at room temperature for up to 5 days or freeze for up to 3 months.
