Description

This cheesy, melty bake is truly a snack that hits the spot—perfect for busy days, cozy weekends, or when you need something quick and satisfying. Made with cottage cheese, mozzarella, eggs, and customizable pizza toppings, it’s one of those tasty easy to make snacks that’ll win over the whole family. Ideal for anyone looking to add a fun, flavorful option to their snack rotation, especially when time is tight!

Ingredients

Scale

1 cup cottage cheese
1 cup mozzarella cheese, shredded
3 large eggs
1 1/2 teaspoons salt
1 cup corn starch or tapioca starch

Toppings:
1/2 cup pizza sauce
1/2 cup pepperoni (or any desired toppings)
1/2 cup mozzarella cheese, shredded

Instructions

Preheat the oven to 375°F. Lightly grease an 8×8-inch baking dish or line it with parchment paper for easy cleanup.

In a large mixing bowl, combine 1 cup cottage cheese, 1 cup shredded mozzarella cheese, 3 large eggs, 1 1/2 teaspoons salt, and 1 cup corn starch or tapioca starch. Stir until the mixture is well combined. Don’t worry if it appears lumpy—it will smooth out once baked.

Pour the mixture evenly into the prepared baking dish, spreading it out with a spatula.

Spoon 1/2 cup pizza sauce over the top, followed by 1/2 cup shredded mozzarella cheese and 1/2 cup pepperoni slices (or any toppings you prefer).

Bake in the preheated oven for about 25 minutes, or until the edges are golden and the cheese is bubbling.

Allow it to cool slightly before slicing into squares. Serve warm and enjoy!

Notes

You can swap mozzarella with cheddar, provolone, or pepper jack for different flavors. For a gluten-free option, use tapioca starch. Feel free to add veggies like bell peppers, mushrooms, or spinach. Leftovers can be refrigerated for up to 3 days or frozen for up to one month. Reheat in the oven at 350°F until warmed through.
