Ingredients
For the Chicken
2 boneless, skinless chicken breasts
1 cup buttermilk
1 cup all-purpose flour
2 tablespoons cornstarch
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 egg
Vegetable oil, for frying
For the Waffles
2 cups waffle mix
1 egg
1 1/4 cups milk
2 tablespoons melted butter
For the Spicy Honey Glaze
1/3 cup honey
1 tablespoon hot sauce
1/2 teaspoon cayenne pepper
Instructions
Marinate the chicken by combining the buttermilk, salt, and black pepper in a bowl. Add the chicken breasts and let them soak for at least 30 minutes or overnight for deeper flavor.
In a separate bowl, mix the flour, cornstarch, baking powder, smoked paprika, garlic powder, and onion powder.
Remove the chicken from the buttermilk and coat it in the flour mixture. Dip it into the beaten egg, then return it to the flour mixture for an extra crispy coating.
Heat vegetable oil in a deep pan to 350°F (175°C). Fry the chicken for about 5 to 7 minutes per side until golden brown and crispy. Remove and drain on paper towels.
For the waffles, mix the waffle mix, egg, milk, and melted butter in a bowl. Pour the batter into a preheated waffle iron and cook until golden brown.
To prepare the spicy honey glaze, warm the honey, hot sauce, and cayenne pepper in a small saucepan over low heat until well combined.
Serve the crispy fried chicken on top of the waffles, drizzle with spicy honey glaze, and enjoy immediately.
Notes
For extra crunch, double-dip the chicken in the flour mixture before frying.
If you prefer more heat, increase the cayenne or hot sauce in the glaze.
